BANANA MUFFINS 
1/2 c. butter
1 1/4 c. sugar
2 eggs
1/4 c. sour cream
1 tsp. baking soda
1 c. mashed bananas
1 1/2 c. flour
Dash of salt
1/4 tsp. vanilla

Cream butter and sugar. Add eggs. Beat until light and fluffy. Add sour cream and baking soda. Stir in bananas. Add flour and a dash of salt. Beat until smooth. Add vanilla. Bake in muffin pans. Bake at 350 degrees for 15 to 20 minutes.
