BANANA MUFFINS 
1/2 c. butter
1 c. sugar
2 lg. bananas (mashed)
4 generous tbsp. sour cream
1 orange rind (grated) + juice of 1 orange
1 tsp. baking powder
1 tsp. baking soda
2 c. flour

Cream butter and sugar. Add eggs then bananas. Sift dry ingredients together and add banana mixture. Fold in sour cream. Pour into greased or paper-lined muffin cups. Bake at 350 degrees for 20 to 25 minutes.
