PUERTO RICAN TURKEY 
Whole turkey
5 peppercorns
1 tbsp. oregano
2-3 tbsp. salt
2-3 cloves garlic
3 tbsp. olive oil
Juice of 1 lemon

Grind peppercorns and oregano; add garlic and salt. Mash to a paste. Add lemon juice and oil. Puncture turkey deeply all over with a knife. Baste mixture all over outside and inside. Marinate for two hours at room temperature or overnight in refrigerator. Follow regular manner of baking turkey. No basting is necessary.
