CALDO DE QUESO 
3 potatoes
5 c. water
1 clove garlic
1 green onion, chopped
1 tomato, chopped
6 tsp. (heaping) chicken bouillon
Pinch each of coriander & oregano
1/2 c. grated cheddar cheese
Pinch of pepper
1/4 of 1 green pepper, chopped

Bring water to a boil and add chicken bouillon. Peel potatoes and cut into 1 inch squares. Fry them in oil until light brown. Add chopped garlic and onions, tomato and green pepper. Stir well. Add coriander and oregano and bring to a boil. Cook 20 minutes. Add cheese to each bowl before serving. Serves: 4.
