CASSEROLE CON QUESO 
1 lb. ground beef
1/2 c. chopped onion
8 (5") tortillas, cut into strips
1 (12 oz.) can vacuum packed whole corn with sweet peppers
1 1/2 c. chili sauce or 1 can or pkg. enchilada sauce
1/2 tsp. salt
1/2 tsp. cumin powder
1 1/2 c. grated cheddar cheese

Brown beef and onion in small amount of oil in large heavy frying pan. Saute cut tortillas in hot oil separately until all pieces are coated with oil and are crisp. Drain on toweling.

Combine all ingredients except half of the cheese. Spoon into greased 1 1/2 quart casserole. Top with remaining cheese. Bake at 350 degrees for about 30 minutes.
