ZUCCHINI CASSEROLE IMPERIAL 
4 c. sliced zucchini
2 c. boil water
2 beaten eggs
1 c. mayonnaise
1 c. chopped onion
1/4 c. chopped green pepper
1 c. Parmesan cheese
1 tbsp. butter
2 tbsp. bread crumbs
Salt & pepper

Cook zucchini and boiling water until tender. Combine mayonnaise, onion, green pepper, cheese, salt and pepper into eggs. Add zucchini. Put into greased 1 1/2 quart casserole. Top with butter and bread crumbs. Bake at 350 degrees for 30 minutes.
