ZUCCHINI CASSEROLE 
6 c. zucchini, sliced, cooked and cooled
2 eggs, beaten
1/2 c. mayonnaise
1 green onion, chopped
1/4 c. green pepper, chopped
1/2 c. Parmesan cheese
Salt and pepper

TOPPING:

1 tbsp. butter, melted
4 tbsp. bread crumbs or soda crackers, crumbled

Combine zucchini, eggs, mayonnaise, green onion, green pepper, cheese, salt and pepper. Turn into casserole dish. To make topping, mix melted butter and crumbs. Top casserole. Bake at 350 degrees for 45 minutes.
