ZUCCHINI PUFF CASSEROLE 
2 eggs
1 c. mayonnaise
1 c. grated Parmesan cheese
4 c. sliced, par-boiled zucchini
1/4 c. chopped green pepper
1 c. chopped onion
1 c. sliced mushrooms
Buttered bread crumbs
Salt and pepper

Beat eggs; add mayonnaise, Parmesan cheese, salt and pepper. Mix together. Add to vegetables.

In buttered 8x8 inch pan, place vegetables/sauce. Top with buttered bread crumbs. Bake 350 degrees for 35-45 minutes.
