LEMON GINGER JELLY 
1/2 c. fresh lemon juice
2 c. water
1 bottle certo or liquid pectin
1 tbsp. ground ginger
6 c. sugar

Mix juice, sugar, water and ginger and bring to a boil. Add certo, bring to a full rolling boil for 1/2 minute. Remove from heat and skim off any foam. Pour into sterilized jelly jars or 1/2 pint jars.
