BARBARA'S FAMOUS SPINACH QUICHE 
10 oz. cooked spinach
2 eggs
3 oz. cream cheese
3 oz. eggmount cheese, shredded (sharp Cheddar)
1/4 c. finely chopped onion
1 uncooked pastry shell (deep dish pie pan)

Preheat oven to 425 degrees. Reserve 2 tablespoons onion. Mix above ingredients. Roll pie shell out to fit deep dish ungreased pie pan. Sprinkle 2 tablespoons onion on pie shell. Pour spinach mixture in pie shell. Bake at 425 degrees for 15 minutes, reduce oven to 325 degrees for 30 minutes. Cover exposed crust with foil to prevent burning. Bake until knife inserted in center comes out clean. Serves 6.
