BARBARA'S HUSH PUPPY MUFFINS 
1 c. yellow cornmeal
1 c. flour
1 tbsp. baking powder
1 tsp. salt
1 tsp. sugar
1/8 tsp. cayenne
1/2 c. finely chopped onion
1 lg. egg, beaten
1/3 c. milk
2 tbsp. vegetable oil

Preheat oven to 425 degrees. Grease 12 muffin cups or line with paper baking cups. In a medium bowl, blend cornmeal, flour, baking powder, salt, sugar and cayenne. Stir in onion.

In a small bowl, beat egg, milk and oil. Add to cornmeal mixture and as quickly and as lightly as possible blend ingredients just to moisten. (Do not try for a uniform batter; there will be some lumps.) Spoon into muffin cups and bake until golden brown, 15 to 20 minutes. Makes 12 muffins.
