GREEK PILAF 
1/4 lb. butter
3 c. raw rice, use 1st quality rice only
6 c. chicken broth
1 med. onion, chopped
1/4 tsp. ground pepper
Dash garlic powder
2 tbsp. parsley, dried

In a heavy skillet melt butter. Add chopped onion and saute until lightly browned. Add the rice and brown (almost to that of brown rice). Place into 3 quart casserole. Add seasonings, toss. Then add broth. Cover and bake in a 350 degree oven for approximately 1 hour or until all the liquid is absorbed by the rice. Pass plain yogurt to top pilaf.
