CHEWY PECAN BARS | |
1 box yellow cake mix (not butter flavor) 1/3 c. vegetable oil 1 lg. egg TOP LAYER: 1 c. sugar 1 c. dark Karo corn syrup 4 lg. eggs 1/4 c. butter, melted 2 c. chopped pecans Preheat oven to 350 degrees. Generously grease a 13 x 9 inch cake pan, bottom and sides. Bottom: Mix together by hand until large ball forms. Crumble evenly into bottom of pan and press down. Bake 15-18 minutes - until slightly brown. Top: Mix first 4 ingredients on low speed for 2 minutes. Stir in pecans. Pour over crust. Bake 30-40 minutes, or until top layer is set. A sharp knife inserted should come out clean. (Hint: to remove from pan easily, cut a large piece first). |
