QUICHE 
CRUST:

2 oz. Velveeta cheese
1/2 stick butter, softened
3/4 c. flour

FILLING:

1 lb. spinach, blanched & chopped
1 bunch scallions, chopped (or onions
1/4 lb. mushrooms, chopped
6 slices bacon, cooked & crumbled
Salt & pepper
Nutmeg
3 eggs, beaten
2 c. Swiss cheese, shredded
3/4 c. sour cream
Parmesan cheese

Preheat oven to 375 degrees. Mix crust with hands and press into 9 inch round dish. Layer spinach, onions, mushrooms and bacon over crust. Season with salt, pepper and nutmeg. Mix eggs with cheese and sour cream. Pour over mixture in shell. Top with lots of Parmesan cheese. Bake for 40 minutes.
