BRUNCH QUICHE 
1/4 c. chopped onion
1 tbsp. butter
1 (8 oz.) pkg. cream cheese, cubed
1 c. milk
4 eggs, beaten
10 oz. pkg. frozen chopped spinach, cooked, drained
1 c. (4 oz.) shredded Swiss cheese
6 slices crisply cooked bacon

Saute onion in butter. Add cream cheese and milk; stir over low heat until cream cheese is melted. Gradually add to eggs. Stir in spinach, Swiss cheese, and bacon; mix well. Pour into pastry shell. Bake at 350 degrees for 35-40 minutes or until set.
