MINI MEAT LOAVES AND VEGETABLES | |
1 1/2 lb. lean ground beef 1/2 tsp. salt 1 egg 1 can (8 oz.) tomato sauce 1/2 tsp. Italian seasoning 1 can Durkee French fried onions (2.8 oz.) 6 sm. redskin potatoes, sliced thin 1 bag (16 oz.) frozen broccoli, corn, red pepper combination, thawed & drained Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions. In 9 x 13 inch baking dish form 3 mini loaves. Place potatoes around loaves. Bake, covered at 375 degrees for 35 minutes. Place vegetables around loaves; stir to combine with the potatoes. Lightly season with salt and pepper. Top meat loaves with remaining tomato sauce. Bake uncovered, 15 minutes. Top loaves with remaining onions; bake, uncovered, 5 minutes longer. |
