MINI MEAT LOAVES 'N VEGETABLES 
1 1/2 lb. lean ground beef
1/2 tsp. salt
1 egg
1 can tomato sauce
1/2 tsp. Durkee Italian seasoning
1 (2.8 oz.) can Durkee French fried onions
6 sm. red skin potatoes, sliced thin
1 (16 oz.) bag frozen broccoli, corn, red pepper combination, thawed and drained

Combine meat, salt, eggs, 1/2 can tomato sauce, Italian seasoning and 1/2 can fried onions. In a 9x13 inch pan, form 3 miniature loaves. Place potatoes around loaves; then place the vegetables around the loaves, stirring to combine with the potatoes. Lightly season with salt and pepper, if desired. Top meat loaves with remaining tomato sauce. Bake, uncovered 15 minutes in a 350 degree oven. Top loaves with remaining onions and bake another 5 minutes or until loaves are done.

MICROWAVE INSTRUCTIONS: Prepare as directed above except for pan size; for microwave use 8x12 inch pan, and place potatoes under and around meat loaves. Cook, covered, on high for 10 to 13 minutes; turn halfway through the cooking. Add vegetables and top meat with sauce. Cook, covered, on high for 7 minutes. Top with remaining onions; cook uncovered on high for 1 minute. Let stand 5 minutes before cutting. Yield: 3 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
