POTATO CASSEROLE 
2 tbsp. butter
2 lbs. Southern style hash browns, frozen
1 pt. sour cream
1/2 c. chopped onion
2 c. grated Cheddar cheese
1 can cream of mushroom soup
1 tsp. salt
1/2 tsp. pepper
1 sm. can mushrooms or mushroom pieces

Melt butter and pour into 9 x 13 inch casserole dish. Mix remaining ingredients in a mixing bowl. Then pour into casserole dish and bake for 1 hour at 350 degrees. Variations: You can use cream of potato soup, cream of chicken soup, cream of celery soup, or golden mushroom soup instead of cream of mushroom soup.
