RED CHINESE CHICKEN 
2 (1 inch) slices ginger root
2 cloves anise
1/2 cinnamon stick
1 tbsp. peppercorns
1/4 c. soy sauce
1/4 c. sherry
1/4 c. sesame oil
1 whole chicken, or 2 to 3 cornish hens

Combine first 7 ingredients and pour over poultry that has been placed in a dutch oven. Baste 2 to 3 times while baking. Bake at 350 degrees, covered, for approximately 1 hour.
