SQUASH CASSEROLE 
2 c. cooked squash, drained
1 sm. chopped onion
1 c. sour cream
1 can cream of chicken soup
1 grated carrot
1/2 c. grated cheese
Salt and pepper to taste
1 1/2 sticks butter
Pepperidge Farm stuffing mix (8 oz. pkg.)

Mix first 7 ingredients and save. Melt butter and mix into stuffing mix. Sprinkle 1/2 in bottom of casserole dish. Pour in mixture. Sprinkle balance of mixture on top. Cook 20-25 minutes at 350 degrees.
