YELLOW SQUASH CASSEROLE 
2 lb. yellow squash, steamed, drained & mashed
2 skinned & grated carrots
1 grated med. onion
1 c. sour cream
1 can cream of chicken soup
2 tbsp. brown sugar
1/4 c. butter, softened
1 (8 oz.) pkg. Pepperidge Farm herb stuffing
1/4 c. grated Swiss cheese
Salt & pepper to taste

Combine all ingredients except for 1 cup stuffing. Place in greased 12 x 12 x 2 inch baking dish. Top with remaining stuffing. Bake at 350 degrees for 30-40 minutes or until top is brown.
