YELLOW SQUASH CASSEROLE 
2 c. cooked, mashed squash
1 med. onion, minced
1 can cream of chicken soup, undiluted
3/4 c. grated carrots
1 c. scalded sweet milk
1/2 c. melted butter
1 c. shredded sharp cheddar cheese
2 eggs, beaten well
1 (8 oz.) carton sour cream
1 (8 oz.) pkg. herb season stuffing mix
Salt & pepper to taste

With exception of 1/4 herb stuffing, mix ingredients together and pour into 3 quart greased casserole dish. Top with remaining of stuffing mix. Bake at 350 degrees for 45 minutes.
