ROYAL HAM SCALLOP | |
3 hard boiled eggs 1 1/2 c. buttered bread crumbs 1 c. flaked cooked ham 2 c. med. white sauce Butter a baking dish; put in a quarter of crumbs. Add a layer of ham and a layer of chopped eggs. Cover with layer of white sauce, then 1/4 of the crumbs. Repeat layer of eggs and ham. Add white sauce and cover with remaining crumbs. Cook in a moderate oven until crumbs are lightly brown (about 20-30 minutes). WHITE SAUCE: 2 tbsp. butter 1/2 tsp. salt 2 tbsp. flour 1 c. milk Melt butter in a saucepan or double boiler over low heat. Add flour and salt. Stir to make a smooth paste. Cook for 1 minute. Add milk slowly. Stir to keep smooth and cook over low heat until thickened. Makes 1 cup. |
