SHRIMP SCAMPI 
1 1/2 lb. green shrimp, shelled

Saute shrimp in 4 tablespoons olive oil until it turns pink, about 5 minutes.

Remove shrimp from pan. Saute 4 cloves garlic, minced, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 cup dry parsley in oil remaining in pan for about 1 minute.

Add 1 cup dry white wine. Boil wine mixture until reduced by 1/4. Return shrimp to pan to warm.
