SCAMPI 
1 1/2 c. chopped onion
1/4 c. olive oil, more if needed
3 lb. fresh (or frozen & thawed) shrimp, shelled & deveined
1/2 c. olive oil, as needed
1/2 c. chopped parsley
3- garlic cloves, crushed
2 tbsp. lemon juice
1 1/2 tsp. salt, as desired
3/4 tsp. pepper

Scallops can be added or substituted.

Saute onion in olive oil until just tender. Transfer sauteed onion and any remaining oil to large mixing bowl. Add shrimp, 1/2 cup olive oil (enough to coat well), 1/2 cup parsley, garlic, lemon juice and 3/4 teaspoon pepper. Toss together well.

Arrange shrimp in large, shallow baking dish. Pour remaining sauce over them. Broil 3-5 minutes 6 inches from heat source. Turn and broil 3-5 minutes. Salt only to taste.
