STRAWBERRY NUT BREAD | |
3 c. whole fresh strawberries 1/3 c. white sugar 4 eggs 1 c. vegetable oil 1 1/2 tsp. vanilla 3 c. flour 2 tsp. cinnamon 1 3/4 c. white sugar 1/4 c. brown sugar 1 tsp. salt 1 c. coarsely chopped walnuts 2 tbsp. honey Set oven at 350 degrees. Place strawberries in bowl and cover with 1/3 cup sugar. Gently mash to start juices flowing. Stand at room temperature one hour. With mixer, blend eggs, oil, vanilla, cinnamon and sugars. Add drained strawberries. Mix well. Add flour, salt and soda. Blend. Add nuts. Pour into 2 greased 9"x5" loaf pans. Add 1 tablespoon honey to each pan. Lightly fold into batter. Bake 55 to 60 minutes. Freezes well. Makes 2 (9"x5") or 6 (3"x5") mini loaves. |
