CLAY'S CHILI | |
2 lb. lean ground beef 1 lb. smoked sausage 1 medium onion, chopped 3 tbsp. minced garlic 1/4 cup brown sugar 1 cup barbecue sauce (I use Sweet Baby Ray's) 1/2 (12 oz.) bottle beer (your choice) 2 env. mild chili seasoning 1 env. southwest marinade seasoning 2 (15 oz. ea.) cans diced tomatoes 1 (15 oz.) can black beans 1 (15 oz.) can dark red kidney beans 2 (15 oz. ea.) cans regular chili beans Brown the ground beef. Cut smoked sausage in cubes and add to ground beef. Add the chopped onion, garlic, brown sugar and barbecue sauce. Add the beer and packets of powdered seasonings. Bring to a boil and then reduce heat. Add tomatoes and all the beans and let that simmer for about an hour stirring often. Serves about 10 to 14. Recipe may be halved. Enjoy!!
