BLUE CHEESE FETTUCINNE 
1 tbsp. butter
1/3 c. chopped walnuts
1 1/2 oz. blue cheese (1/3 c.)
1 1/2 oz. Parmesan cheese (1/3 c. grated)
6 oz. fettuccine
1/2 c. heavy cream
Salt & pepper
2 tbsp. chopped scallion greens

Melt butter. Add walnuts and cook until lightly browned (1 minute). Crumble blue cheese and grated Parmesan. Cook pasta in boiling water (salted) until done. Drain and return to hot pan. Stir in cream, cheeses, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook on low heat until the sauce thickens, stir in walnuts and scallions. Very good with chicken or steak as a side dish. Serves 4.
