MOM'S LEMON PIE 
1 baked pie shell
1 c. sugar
3 tbsp. flour
4 tbsp. cornstarch
Pinch of salt
1 1/2 c. boiling water
2 egg yolks (save whites for meringue)
Juice from 1 lemon (1/4 c. if you use Real Lemon)
Grated rind from 1 lemon
1 tsp. butter

Mix sugar, flour, cornstarch, and salt in double boiler. Slowly add boiling water, stirring constantly. Cook at least 20 minutes or until thick. Add yolks, butter and lemon juice and rind. Do not cook. Pour in 9 inch pie shell; baked. Make meringue from 2 egg whites and beat until stiff and add 4 tablespoons sugar and beat until smooth. Put on pie and brown in oven at 400 degrees for 10 minutes.
