BEEF ENCHILADAS 
2 lb. ground beef
1 clove garlic
1 lg. onion
1 pkg. enchilada mix
3 c. grated Cheddar cheese
1 (16 oz.) can tomato sauce
1 can of your favorite chili
1 pkg. flour tortillas
1 c. water

Cut onion and garlic into small pieces. Add to beef and cook in frying pan. Drain beef and add enchilada mix with approximately 1 cup water. Simmer until most of the liquid is gone. Place meat inside refrigerator to cool. When meat is cool add 2 cups of cheese to the meat and mix.

Heat tortillas up. Fry in pan with oil for 5 seconds each side. Tortillas just need to be limp not cooked. May heat up in microwave. Pour the tomato sauce in the bottom of a 9 x 13 inch cake pan. Spoon meat mixture onto the tortilla shell and roll up to form a cylinder shape burrito. Layer the tortilla in the pan to form 2 rows of rolled up tortilla shells. Heat up the chili and then pour over the tortilla shells. Pour over the remaining meat mixture and the remaining 1 cup of cheese. Bake in the oven at 350 degrees for about 30-45 minutes or until it bubbles around the sides.

Since microwave ovens vary in power, you may need to adjust your cooking time.
