APPLE HARVEST CAKE 
1 1/4 c. flour
1 c. whole wheat flour
1 c. sugar
3/4 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
3/4 c. oil
1 tsp. vanilla
3 eggs
2 c. chopped apples
1 c. raisins

Mix flours, sugars, baking powder, baking soda, salt, cinnamon. In separate bowl mix oil, vanilla and eggs. Combine both mixtures together and add apples and raisins. Beat until smooth (except fruit). Bake in angel food pan or 9x14 pan at 350 degrees for 50-60 minutes. Yield 16 servings.
