FRESH APPLE CAKE 
2 c. flour, sifted
1 c. whole wheat flour, sifted
3/4 tsp. salt
1 tsp. baking soda
1 1/2 c. sugar
1 tsp. allspice
1 tsp. cinnamon
3 eggs
1 c. plus 2 tbsp. vegetable oil
2 tsp. vanilla
3 1/4 c. chopped, peeled raw "Granny Smith" apples

Mix dry ingredients. Add eggs and oil. Mix by hand. Add vanilla. Add apples. Bake in greased and floured tube pan at 325 degrees for 1 hour and 15 minutes. Wait 15 to 30 minutes, then unmold and pour glaze over cake.

GLAZE:

3/4 stick of butter
3/4 c. brown sugar
2 tbsp. milk
2 tbsp. apple cider
1/2 tsp. salt
1 tsp. vanilla extract

Melt butter. Add other ingredients (except vanilla) and cook 3 minutes, stirring constantly. Add vanilla. Pour over cake.
