STUFFED GOURMET CHICKEN BREASTS 
4 chicken breasts, skinned and boned
Salt and lemon pepper
1/2 c. butter
1/2 tsp. paprika
1 1/2 c. mushrooms, sliced
3/4 c. celery, sliced
1/2 c. onion, chopped
1 c. water
3 c. herb-seasoned dry stuffing mix

Preheat oven to 375 degrees. Sprinkle chicken lightly with salt and lemon pepper. Melt butter and combine 1 tablespoon of the butter with paprika and brush over chicken. Saute mushrooms, celery and onion in remaining butter until onion is soft. Add water and heat to boiling.

Pour over stuffing mix, tossing to moisten evenly. Place in baking dish and top with chicken. Bake uncovered at 375 degrees for 1 hour or until chicken is well browned and tender. Serves 4.
