PATRICK'S MANGO SALSA 
12 Roma tomatoes, seeded, diced
1 red onion, diced
5 jalapenos, diced (add 1/4 habanero pepper for extreme heat)
2 mangoes, diced
1 cup finely chopped cilantro
1 tsp salt
1 tsp ground cumin
1 tsp chilli powder
1/2 cup olive oil
1/2 cup freshly squeezed lime juice
1 tbsp. Tabasco or other pepper sauce

Mix all of the ingredients together. Refrigerate for 1 hour and then serve. Keep in mind that the salt will draw out the juices from the ingredients and so the mixture may have to be drained from time to time. Save the juice for Bloody Mary's or Caesar.

LOVED this salsa over fresh grilled dolphin! I cut everything in half accept for the spices, but I like more of a 'kick!' It was wonderful and a delightful compliment to the fish. I also prepared couscous and cut up more onions and tomatoes and added to the couscous for more flavor. Truly a light/DElight!

This salsa was a huge success at my dinner party. I made it with 4 jalapenos instead of 5. It had quite a kick as it was. Next time I will make it with 2 or 3 for a milder kick. It is delicious.

I can't stop making this. It is now requested at all my parties. I even won a salsa contest with this recipe and I had never made salsa before. Wish they had a better prize though. Love the recipe!
