ELLIE'S APPLE CAKE 
1/2 c. vegetable oil
2 c. sugar
3 eggs
1 tsp. vanilla
2 c. all-purpose flour
1 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
2 c. peeled apples, cut in chunks (most any apples will do but cooking apples,
especially Granny Smith are best)
1 c. raisins
3/4 - 1 c. walnuts or pecans
Powdered sugar (optional)

In mixer bowl, combine oil and sugar; beat until thick. Add eggs, one at a time. Mix in vanilla. Sift flours together with soda, cinnamon, salt, and nutmeg. Add to oil mixture; mix well. Stir in apples, raisins, and nuts; stir together well. The batter is heavy and sticky at this point and you may have to use a large wooden spoon. Bake in 13 x 9 x 2 inch pan at 325 degrees for 1 hours 15 minutes. Dust with sugar if wanted.
