CHICKEN WITH TARRAGON AND LEMON
(WITH SAGE MAYONNAISE)
 
1 (8 oz.) boneless chicken breast (skinless)

Marinate overnight in:

1 c. olive oil
1/8 c. white vinegar
Juice of 2 lemons & 1 lime
2 tbsp. dry tarragon or 1 bunch fresh tarragon
1 tsp. salt
1/2 tsp. pepper, white
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
1/4 c. sugar

To Serve: Grill and serve with Sage Mayonnaise. Slice on bias against grain.

Serves 1.

SAGE MAYONNAISE:

Dip for chicken.

1 tsp. garlic, chopped
2 tsp. shallots, chopped
2 tbsp. sage, dry or 1 bunch fresh
1 c. white wine

Reduce ingredients until dry and add to 1 cup mayonnaise.

Garnish: Bantonette of red roasted pepper.
