Peel ripe guavas and spoon out center seed section. Chop quite fine the firm part of the guava. Using a fine strainer, wash the pulp away from the seeds, pressing it through the strainer with a spoon. Combine the pulp with the chopped guava and sweeten to taste. Use over shortcake as for other fruit shortcake.
Note: When it is too-o hot to heat the oven to bake a cobbler or shortcake, make a short biscuit dough with a little sugar added and bake on waffle iron. Serve with fruit on top and whipped cream or topping. Mission Mix Biscuit dough can be used .
