LEMON MUSHROOM TARRAGON CHICKEN 
4 lbs. chicken
1/2 stick butter
2 tbsp. oil
Juice of 2 lemons
2 tbsp. tarragon
1 lb. mushrooms
Salt & pepper, to taste

Melt butter in pan, add oil and lemon and spices. Simmer 1 minute, brush on chicken and bake at 400 degrees. Saute mushrooms in butter and spoon over chicken. Can substitute fish for chicken, if desired.
