FRESH APPLE CAKE 
1 1/2 c. vegetable oil
3 eggs
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
3 c. diced, raw apple
1 c. raisins
1 c. chopped walnuts

Dust apples, raisins and nuts with some of the flour; set aside. Blend oil, sugar and slightly beaten eggs. Sift together remaining flour, salt and soda. Add to egg mixture, fold in coated apples, nuts and raisins. Turn into greased tube cake pan (10"). Bake in 325 degree oven for 1 hour 15 minutes.

SAUCE: Combine 1/2 cup buttermilk, 1 stick butter, 1 cup sugar, 1 teaspoon vanilla, and 1/2 teaspoon baking soda; boil rapidly 2 minutes, stirring constantly. Pour over cake while still hot, leave in pan several hours.
