FRESH APPLE CAKE 
2 med. apples
1 c. sugar
1 1/2 c. cake flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 c. melted butter
1 egg
1/2 c. seedless raisins
1/2 c. chopped walnuts

Peel and core apples, coarsely chop and measure 1 3/4 cups into a large bowl; add sugar, let stand 10 minutes. Sift flour; measure, add soda, salt, cinnamon, nutmeg and allspice; sift again. Blend butter and egg into apple mixture. Add flour stirring just until blended. Fold in raisins and nuts. Pour into greased 8 inch square pan at 350 degrees for 50 to 55 minutes. Cool 10 minutes. Remove from pan, cool thoroughly on rack. Sprinkle with confectioners' sugar.
