APPLE HARVEST CAKE 
1-1/4 c. flour
1 c. whole wheat flour
1 c. sugar
3/4 c. packed brown sugar
1 tbsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 c. oil
1 tsp. vanilla
3 eggs
2 c. peeled & finely chopped apples
3/4 to 1 c. chopped nuts

Preheat oven to 325 degrees. Generously grease and flour Bundt pan. Blend first 11 ingredients with 1 cup apples; beat 3 minutes at medium speed. By hand, stir in remaining apples and nuts. Pour into prepared pan. Bake 50 to 65 minutes (use toothpick test). Cool upright in pan 15 minutes, turn onto plate. Cool.

GLAZE OR SAUCE:

1/2 c. firmly packed brown sugar
1/2 c. dairy sour cream
1/4 c. butter
1/4 c. chopped nuts

Combine in medium saucepan (except nuts). Bring to a boil, boil 3 minutes, stirring occasionally. Pour over or spoon on individual servings.
