APPLE HARVEST CAKE 
2 3/4 c. flour
1 tbsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. salt
4 eggs, beaten
1 1/2 c. finely chopped apples
1 c. oil
1 1/2 c. brown sugar, firmly packed
1/2 c. milk
2 tsp. vanilla
1 1/3 c. Quaker 100% natural cereal

Generously grease 12 cup bundt pan or 10 inch tube pan. In small bowl, combine flour, baking powder, cinnamon, and salt. Mix well. In large bowl, combine apples, sugar, oil, eggs, milk, and vanilla. Add flour mixture, mixing until just moistened. Stir in cereal. Spoon into pan. Bake at 325 degrees for 60 to 65 minutes until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool on wire rack. Sprinkle with confectioners' sugar when cool.
