SWISS-CHARD BAKE 
1 1/2 lb. Swiss chard
1/2 onion, minced
2 tbsp. butter
4 eggs, well beaten
1 c. buttermilk
2 tbsp. flour
1/2 tsp. salt
Few drops of pepper sauce
1 pkg. shredded cheddar cheese

Wash and peel stems from chard and drop in boiling water. Cook about 3 minutes before adding the leaves. Cook another 3 minutes. Remove from water and cut into pieces. Cook onion in butter a few minutes. Then add the Swiss chard to skillet with onion and butter stirring constantly to the flavor of onion and butter. Set aside.

Beat eggs, add buttermilk, flour and salt and pepper. Mix well together. Combine cheese. In greased casserole place a layer of chard and a layer of cheese until all in dish. Cover with egg mixture. Bake for 30 minutes at 350 degrees.

Made this for a Harvest Dinner and it was all gone. Have made a few times since with our garden chard and grated our own cheeses, cheddar and parmesan. It is very good but not the healthiest treatment of chard. Also, I leave out the added salt, the cheese has enough sodium.

OK! this is a great recipe but I have to say that I have changed it to reduce the fat. I make my own buttermilk by using fat free milk with 1 Tbs of white vinegar added. Then I also use low fat or weight watchers cheese (I like the Italian blend they do). Anyway it turned out awesome and everyone loved it.

I added 3 pieces of bacon and much less cheese (1/4 Cup) And 1 tsp paprika, red pepper flakes, and onion powder, and substituted low fat buttermilk. Bake uncovered. Used 2 standard batches of chard from a health food store. Maybe I needed to add more cheese next time. Has potential.
