GOOD AND EASY POT ROAST RICH
TASTING
 
4 to 6 lg. onions, diced
4 tbsp. oil
3 or 4 lb. chuck roast
2 tbsp. flour
1/2 small bottle of catsup

Brown 4 to 6 large onions diced in 4 tablespoons fat or rub 2 tablespoons flour into lightly salted chuck roast and brown.

Make a bed of soft and golden brown onions in a heavy dutch oven style cooking kettle.

Turn heat down low. Put roast on top of onions. Bring to a boil 1/2 bottle of catsup mixed with 1 cup of water. Pour this over the roast and cook slowly, covered for 2 1/2 to 3 hours. The beef will add flavor to the sauce and the sauce will add flavor to the beef.
