CHOCOLATE ECLAIR DESSERT 
1 box graham crackers
2 (4 oz.) size pkgs. vanilla pudding & pie filling(4 oz.) frozen whipped topping, thawed

Grease a 13"x9" (8"x8" for 1/2 recipe). Line with crackers. Prepare pudding mix as directed on package. Fold in whipped topping. Spread 1/2 mixture over crackers. Top with crackers and spread other 1/2 mixture over crackers. Top with crackers individually with frosting.

FROSTING:

2 oz. unsweetened chocolate
2 tbsp. butter
2 tsp. light corn syrup
1 tsp. vanilla
1 1/2 c. confectioners' sugar
3 tbsp. milk

Melt chocolate and butter together. Add the rest of ingredients, mixing until smooth, adding more sugar, if needed. Spread on crackers and top with cherry. May be served at once or kept 2 to 3 days. Use any desired pudding flavor. Suitable for potlucks.
