TENDERLOIN OF PORK WITH
APPLE-RAISIN GRAVY
 
1 1/2 lbs. pork tenderloin, trimmed of fat
1/2 tsp. salt
1/2 tsp. ground sage
1/2 tsp. ground black pepper
3 tart apples, sliced
1/2 c. packed brown sugar
2 tbsp. all-purpose flour
1 c. orange juice
1 tbsp. vinegar
1/2 c. raisins

Season pork with salt, sage and pepper. Roast, uncovered, in a preheated 350 degree oven 30 to 40 minutes.

Combine apples, brown sugar, flour, orange juice, vinegar and raisins. Pour over roast. Return to oven and roast about 30 minutes or until meat thermometer registers 170 degrees. Baste several times during roasting. Serve with hot cooked rice, if desired.

At a dinner party for eight today, 5/19/2012, I had about a 2.25 lb tenderloin so I used 1-1/2 times the recipe ingredients. Also used dried cranberries instead of raisins because I had no raisins. One of the men said it was the best pork he had eaten in his life. It's nice that you can do the prep work a few hours ahead.

This is exceptionally tasty and easy to prepare. Highly recommend it. Be sure to use tart apples to counter the sweetness of the sauce. I used a Pomegranate vinegar which I had just picked up for Christmas and am pleased with how it paired with the orange juice.
