GUACAMOLE DIP | |
2 lg. ripe avocados (3/4 lb. each) peeled, seeded and diced 2 tbsp. fresh lime juice 1 (4 oz.) can chopped green chilies, drained 1 tsp. minced, peeled garlic 1 tsp. salt 1/2 tsp. ground coriander seed 2 tbsp. grated onion 1/4 tsp. pepper 1 lg. ripe tomato, peeled and chopped fine Mash avocados with a fork until fairly smooth. Add lime juice, chilies, garlic, salt, coriander, onion and pepper. Mix well and stir in tomato. May be prepared up to 2 hours ahead. Cover tightly with plastic wrap, placing wrap directly on surface to prevent discoloration. Serve with corn chips or tortilla chips. |
