GUACAMOLE DIP 
2 lg. ripe avocados (mashed)
2 med. tomatoes, finely chopped (about 1 1/2 c.)
1 med. onion, chopped (about 1/2 c.)
1 clove garlic (finely chopped)
2 tbsp. finely snipped cilantro
1 tbsp. vegetable oil
Juice of 1/2 lime (2 tbsp.)
1/2 tsp. salt
Dash of pepper

Mix all ingredients. Cover and refrigerate to blend flavors (about 1 hour).

Tortilla chips make ideal dippers.
