GUACAMOLE 
1 lg. ripe avocado
1 sm. onion, chopped fine
1 clove garlic, crushed
1 tbsp. olive oil
1 tbsp. wine vinegar
1 tomato, peeled & diced
1 tbsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper

Mash, but leave it lumpy. Add other ingredients. Serve with crackers. Yield: 1 1/2 cups.
