ZUCCHINI BOATS 
1/2 c. rice (cooked, drained and cooled)
2 lg. zucchini (do not peel) makes 8
1/2 lb. sausage
1/2 lb. hamburger
1/2 onion (chopped
1 clove garlic (chopped)
1 c. shredded cheese

Brown meats, garlic, onion and parsley. Cut zucchini long ways and in half, scoop out seeds, making a boat, cut in half again. Combine meat mixture and rice, salt and pepper, heap into boats. Bake 50 to 60 minutes in a 13 x 9 x 2 baking dish. Bake in a 350 oven. Bake covered. Uncover and top with shredded cheese and bake 15 more minutes.
